Wondering why sorghum looks like corn, but it's part of a grass-fed diet for cows? All grass-milk farms will harvest their hays and haylages before they reach the seed stage. They are harvesting the leaves and stalks and fermenting as a way to preserve them. Since cattle can digest these cellulose portions they can gain more nutrition from them than we can. For human consumption, we generally wait till the seed stage, as we can easily digest the more starchy grain and we leave the rest of the plant.
