Eggplants are hungry little oil suckers. So here’s how I cook them on the stove, using virtually NO OIL! I basically cook them the same way I do Asian dumplings - seared then pan-steamed. So you just need to spray them with oil before cooking in a dry pan. Works a treat, super fast, and ultra healthy.
It's also a great method to cook thick slabs of eggplant on the stove without burning the surface.

ALMOST NO OIL PAN FRIED EGGPLANT
1 large eggplant, 400g/14 ox about 20 cm/8” long
Olive oil spray (or brush with oil)
Salt and pepper
1. Cut 2cm / 0.8” eggplant rounds. Spray with oil, sprinkle with salt and pepper. Sear each side until browned in a dry non-stick pan over medium high heat.
2. Carefully pour 1/4 cup water into the pan, cover with a lid. Steam for 2 minutes or until the water evaporates. Check to ensure it’s cooked. Add more water and keep steaming if needed. Then serve!
