In this quick recipe, the salmon fillet is combined with saffron, white wine and lemon. Simply delicious! I'm sure you'll like it too.
▬ Ingredients: ▬▬▬▬▬▬▬▬▬▬▬▬▬
250g salmon with skin
40g butter
20g flour
200g creme fraiche
200ml vegetable stock
2 small onions or shallots
100ml white wine
½ lemon
½ a tin of saffron threads
Pepper
Salt
▬ Instructions: ▬▬▬▬▬▬▬▬▬▬▬▬▬
Peel and finely dice the onions.
Clean salmon fillets, pat dry and lightly salt. Refrigerate.
Heat 10g butter in a pan and sauté the onions until translucent.
Heat 30g butter and add the flour. Sauté briefly.
Add stock and white wine while stirring.
Simmer for about 5 minutes, stirring in between.
Stir in crème fraîche and reduce by half.
Add lemon juice.
Stir saffron into the sauce.
Place salmon, skin side down, in sauce.
Simmer, covered, over medium heat for about 5 minutes.
Season to taste with pepper, salt and white wine.
Simmer, covered, over medium heat for another 5 minutes.
