▬ You need: ▬▬▬▬▬▬▬▬▬▬▬▬▬

1 spaghetti or Hokkaido pumpkin
2 large or 4 small potatoes
1 large or 2 small carrots
50 g celery
1 shallot
1 clove of garlic
10 ml olive oil
250 g ground beef
100ml red wine e.g. Chanti
1 tablespoon tomato paste
400g chopped or peeled tomatoes
75g strained tomatoes
Parmesan chees

▬ Instructions: ▬▬▬▬▬▬▬▬▬▬▬▬▬

Clean, peel and finely dice or chop carrot and celery. Peel onion and garlic and chop finely as well.

Heat olive oil in a pan.
Saute onions and garlic over medium heat. Stir occasionally so nothing burns.

Brown ground beef over high heat for 5 minutes. Briefly saute the tomato paste and mix with the meat.
Then drain with red wine.

Add the carrots and the celery.
And add the strained and chopped tomatoes.
Mix it.

Simmer for at least 2 hours on low heat.
Slow cooking makes the beef incredibly tender.
Stir occasionally.

Cut the pumpkin in half and scrape out the seeds with a large spoon.
Then brush the squash halves with olive oil and place them cut side down on a baking sheet.

Bake the pumpkin for about 30-40 minutes at 180 degrees. The baking time varies depending on the size of your pumpkin.

Peel the potatoes, cut into small cubes and boil for about 5-8 minutes.
Remove the pumpkin from the oven and let it cool down a bit first. Then loosen the flesh with a fork and remove the escape flesh.
Spread the potatoes in the pumpkin and add the flesh back.

Now pour the Bolognese sauce on the pumpkin halves, sprinkle with Parmesan and put back in the oven for another 15-20 minutes.
