➖ Recipe ➖

Potatoes & Cheese -

750g (1.6lb) - Baby or New Potatoes, Washed & Halved 
Parmigiano Reggiano, Freshly Grated 

Garlic Butter - 

4 Tbsp (56g) - Unsalted Butter, Softened 
1 Tbsp (20ml) - Olive Oil 
2 - Garlic Cloves, Grated 
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
10g (0.3oz) - Parmigiano Reggiano, Freshly Grated 
1/2 tsp (1g) - Dried Oregano 
1/2 tsp (1g) - Dried Thyme 
1/2 tsp (2g) - Smoked Paprika 
Salt and Pepper 

Method - 

1. Preheat oven to 200.c - 390.f. Line a baking tray with parchment paper. 

2. Add all the garlic butter ingredients in a large bowl and mix well to combine. Season to taste. 

3. Add the halved potatoes to the garlic butter and mix well until coated. 

4. Grate Parmigiano Reggiano into a tray and firmly press the flat side of the potato into the cheese until covered. Place the potatoes cheese side down onto the prepared baking tray. 

5. Bake in the oven for 40-45 minutes or until the potatoes are soft and the cheese has hardened and become crispy. 

Garlic Dill Mayonnaise - 

1 - Whole Egg 
1 tsp (10g) - Dijon Mustard 
3 tsp (15ml) - White Vinegar
150ml (180g) - Neutral Oil (I use Vegetable oil)
2 - Garlic Cloves
10g (0.3oz) - Dill
Salt and Pepper 

Method - 

1. Add all of the ingredients to a blender or immersion blender and blitz on high speed to form an emulsion. Check the seasoning and adjust if necessary. Store in the fridge until ready to serve.
