Ingredients - 

Fajita Spice Mix 

2 tsp (6g) - Paprika
2 tsp (6g) - Onion Powder
2 tsp (6g) - Garlic Powder
2 tsp (6g) - Ground Cumin
1/2 tsp (0.5g) - Red Chilli Powder
Salt To Taste

Chicken Fajitas

1kg (2.2lbs) - Chicken Breast, Butterflied & Sliced Into Strips
1 Tbsp (20ml) - Olive Oil
2 - Brown (Yellow) Onions, Thinly Sliced
2 - Small Red Bell Pepper (Capsicum), Thinly Sliced
5g (0.2oz) - Fresh Oregano, Roughly Chopped (Substitute 1 ½ tsp (2g) Dried Oregano)
Salt To Taste 

Guacamole

1 - Avocado, Coarsely Smashed
¼ - Red Onion, Diced
1 - Tomato, Diced
½ - Jalapeno, Diced
5g (0.2oz) - Coriander (Cilantro), Roughly Chopped
1 - Small Lime, Juiced (Zest Optional)
2 ½ tsp (12.5ml) - Extra Virgin Olive Oil
Salt To Taste 

Brown Rice - 

2 Cups - Brown Rice 
Water To Boil 
Salt To Taste 

Garnish - 

Coriander (Cilantro)
Lime 

Method - 

In a bowl, mix the fajita spice mix & set aside.

In a second bowl, add the stripped chicken, oregano, and salt. Add half of the spice mix, mix, and marinate for 30 minutes to 24 hours.

In a third bowl, add the onion and bell peppers (capsicum). Add the remaining spice mix. Mix to combine and set aside.

Place a large, high-rimmed pan or pot over medium-high heat. Add the olive oil, and once hot, add the onion and bell pepper mix. Sauté for 5-6 minutes, mixing regularly. Remove and set aside. 

Place the same pan back over medium-high heat. Add the remaining oil and sear the chicken for 4-5 minutes or until cooked through and golden. Add the onion and bell pepper mix to the pan and cook for 1 minute. Remove from heat. 

For the guacamole, mash the avocado, leaving it slightly coarse. Add all of the guacamole ingredients and mix well. Portion into small containers and drizzle with extra virgin olive oil.

Bring a pot of water to a boil. Add the brown rice and cook for 30 minutes for medium–and long-grain brown rice and 12 – 14 minutes for brown basmati rice. Drain through a colander. 

Serve the chicken fajitas alongside the brown rice in 5x 750ml containers. Serve the guacamole on the side. Dig in. 

To store, place in the fridge for up to 4 days and in the freezer for up to 4 months, both held in airtight containers. Store the guacamole in a separate container, which will last up to 4 days in the fridge and six months in the freezer. 

To reheat, place it in the microwave and heat it in bursts until hot throughout. Alternatively, it can be reheated in a pan over medium heat.
